Succulent Confit Duck

A culinary speciality of south-western France in general, and the Périgord in particular, confit duck is usually accompanied by pommes sarladaises; a potato dish with garlic and duck >or goose fat. To create this delicacy, the duck meat is cooked for 2 hours in hot fat before bottling. The ideal accompaniment is an excellent Languedoc red wine.

Truffles: Périgord black gold

Famous since antiquity, black truffles were not really used to best advantage until the 18th century when the French gourmet Brillat-Savarin lent his name to a creamy cheese that is delicious in itself, but achieves a new level when stuffed with black truffles. Now a central ingredient of Christmas dishes, truffles have been elevated to the same status of excellence as caviar. During the Périgord truffle hunting season, you can witness for yourself the strange ballet between master and hound as they seek out one or more nuggets of this black gold with its completely individual and intense flavour.
